Spinach Pie (Mutabbaq)

Ingredients
- 4.5 cups white flour
- 3 tbsp starch
- 1/4 cup corn or sunflower oil
- 1/4 tsp salt, 1/2 tbsp sugar
- 1 cup lukewarm water
- 1 kg fresh spinach
- 3 onions, diced
- 4 tsp extra virgin olive oil
- 2 tsp sumac, black pepper, salt
- 8 tsp fresh lemon juice
Steps
- 1Knead the dough until soft and cohesive; let it rest in a warm place for about an hour.
- 2Chop the spinach and place in a pot over low heat for no more than 5 minutes.
- 3Add olive oil, diced onions, black pepper, lemon juice, and sumac; mix well.
- 4Divide the dough into medium-sized balls and place on a floured plate.
- 5Roll out the dough until very thin, place the filling on one side, and roll it into a spiral shape to create layers.
- 6Bake for about 15 minutes until golden brown.
