Stuffed Grape Leaves (Warak Enab)

Ingredients
- 1 kg fresh grape leaves
- 2 cups short-grain white rice
- 1 large tomato, finely chopped
- 1/2 cup finely chopped parsley
- 1/2 cup finely chopped green onions
- 1/4 cup chopped green pepper
- 1 tbsp minced garlic
- 2 tsp ground red pepper
- 3/4 cup olive oil (divided)
- 1 large tomato, sliced
- 3/4 cup fresh lemon juice
- Pinch of salt and black pepper
Steps
- 1Soak grape leaves in hot water for a few minutes, drain, and set aside.
- 2Prepare filling: Mix rice, chopped tomatoes, parsley, onions, peppers, garlic, red pepper, salt, black pepper, and 1/4 cup olive oil.
- 3Spread the leaves on a flat surface and place appropriate filling in the center.
- 4Fold the sides and roll them up; repeat until filling is finished.
- 5Cover the pot and cook on medium heat for 30 minutes.
- 6Add lemon juice and remaining olive oil, lower heat, and simmer for 45 minutes.
- 7Remove from heat, let rest covered for 10 minutes, then serve hot.
