Fatteh
Fatteh is a popular traditional dish in the Levant, Egypt, and Gaza. It is a staple for Iftar in Ramadan and was a key dish in Ottoman banquets, passed down through generations.

Ingredients
- 2 cups boiled chickpeas (reserve the cooking water)
- Fried or toasted Arabic bread
- 1/2 kg minced meat
- Parsley, almonds, and pistachios for garnish
- Ghee or butter (optional)
- 2 cloves of garlic, green pepper
Steps
- 1Soak chickpeas overnight, then drain and boil them, reserving the cooking water.
- 2Divide the chickpeas: keep half as whole grains, and blend the other half with lemon, tahini, garlic, and cumin, using some cooking water for a smooth texture.
- 3Cut and fry or toast the bread. Sauté the minced meat with salt and pepper.
- 4Mix the bread with some chickpea water and lemon, then layer with the tahini-chickpea mixture, followed by the meat and whole chickpeas.
- 5Garnish with almonds, pistachios, and parsley. Serve hot.
